Ham & Cheese Biscuits

My sister-in-law works crazy hours – she drives an hour each way to Dallas every day, then picks up my niece and nephew, then goes to basketball practice, or ballet, depending on the day, and as you can imagine, doesn’t have lots of time for herself, or cooking, for that matter. But she’s a secret Queen of the Ham & Cheese Biscuit, and can whip up a batch of these babies before she’s finished her first cup of coffee in the morning.

These are great for breakfast, but would also be lovely, I think, with a bowl ‘o soup or beans, and would make great party snacks if you made them in miniature. She makes these as drop biscuits, but you could also roll them out.

Wendy’s Ham & Cheese Biscuits

1 ½ cups chopped ham
2 cups flour
1 cup shredded cheddar cheese
2 teaspoons baking powder
Dash of cayenne pepper
1 cup milk

Preheat oven to 400.

Cook the ham for a couple of minutes in a hot cast-iron skillet, to get the edges a bit crunchy. Then, add the ham to a large mixing bowl with flour, cheese, baking powder, and cayenne, and stir until combined.

Add milk, mixing until dry ingredients are moistened. Drop by heaping tablespoons on a greased baking sheet and cook for about 22 minutes.

Pull ‘em out of the oven, and enjoy! I’m gonna make me some of these with that crazy French ham when I get back to Paris.
